During the Observance of Lent

The observance of tradition At The Wright Place On 6th is valued.  The style of our service for
guests is based upon the historical English tradition of service.

We honor local traditions in the same respect we prepare our food from locally sourced ingredients.  During Lent, we’re pleased to include a fish or sea food offering on the daily dinner menu in
keeping with the seasonal observance.

First known uses of the word Lent date back to the 13th Century.  For religious heritages, Lent is
the 40 week days from Ash Wednesday to Easter.  It is a time of preparation, penitence and
fasting. A contemporary Lenten practice is to give up something that is regularly enjoyed.

Always mindful of the need for balance, we will celebrate Lent by preparing fish so that it tastes
like it should.  We season and pan sear in foaming butter.  A variety of eight offerings will be
served:
·        Rhode Island Sea Bass - wild, line caught
·        Atlantic Golden Tilefish
·        Atlantic Salmon - wild, line caught
·        Alaskan Yelloweye Rockfish
·        Arctic Char - confit, cured in salt and slow cooked in Greek extra virgin olive oil
·        Maine Lobster - fresh and alive
·        Scallops

Chef Nathan reviews reports twice a week to monitor the sustainability of fish stocks.  We select
Atlantic species that come from cold water for their good taste.  The fish is wild, line caught in
season.  In support of natural fisheries sustainability, we serve organically farm-raised species
out of season.
